Born and raised in Washington, DC, Zoë Ezrailson is a passionate and creative Pastry Chef with over a decade of experience leading pastry programs in some of the city’s top restaurants. She has built entire dessert programs from the ground up, developing menus, training staff, and ensuring every detail is executed with precision and care.
Zoë has held leadership roles as Executive Pastry Chef at Mirabelle and Fat Baby, Inc., where she oversaw pastry programs for multiple restaurants, including Proof and Doi Moi. She later took on the role of Pastry Chef at ELLE, designing and executing the evening dessert program while mentoring the kitchen team. Her expertise also extends to artisanal bread and laminated pastries, honed through years of hands-on experience at Bread Furst.

Before stepping into executive roles, Zoë was part of the opening team at Rose’s Luxury, where she worked closely with Chef Aaron Silverman during the restaurant’s early days. From recipe testing to pop-up dinners and finalizing plating concepts, she played a key role in helping shape the menu. The restaurant later earned a Michelin star and widespread recognition, solidifying her love for innovative and detail-driven food.
Beyond her work in the kitchen, Zoë is committed to giving back to her community. She has participated in fundraising efforts like the Cookie Kindness Project, supporting families and children in need. For Zoë, pastry is more than just food—it’s an art form that brings people together, and she approaches every creation with passion, creativity, and a love for the craft.
